  • 100 g frozen or fresh peas, approximately 2/3 cup

Method

  1. Rice the cauliflower. Cut the cauliflower into florets. Pulse in a food processor until the pieces resemble rice. Use short pulses and check frequently. Over-processing creates a wet puree. Alternatively, use prepared fresh cauliflower rice.
  2. Heat the pan. Place a large frying pan or wok over medium-high heat. Add the oil and allow it to heat for approximately 30 seconds. The pan must be large enough to keep the vegetables in a relatively shallow layer.
  3. Cook the firm vegetables. Add the onion and carrot. Stir-fry for 3 minutes, or until the onion begins to soften and the carrot remains slightly firm.
  4. Add aromatics and remaining vegetables. Add the bell pepper, peas, garlic, ginger and the white parts of the spring onions. Cook for 2 minutes, stirring continuously. Do not allow the garlic to brown heavily.
  5. Add the cauliflower. Increase the heat to high. Add the cauliflower rice and black pepper. Stir-fry for 3 to 5 minutes, until the cauliflower is tender-crisp and any released moisture has evaporated. Do not cover the pan.
  6. Cook the egg. Push the vegetables to one side of the pan. Pour the beaten eggs into the empty area. Leave them undisturbed for 10 seconds, then stir until just set. Fold the egg through the vegetables.
  7. Season. Add the soy sauce or tamari and stir thoroughly. Turn off the heat. Add the sesame oil, green parts of the spring onions and rice vinegar, if using. Add red pepper flakes if heat is required.
  8. Serve immediately. Divide between bowls. Serve as prepared or with an additional protein such as tofu or cooked chicken.

Variations

Vegan

Chicken

Higher protein

Use three eggs instead of two, or add 150 to 200 g cooked chicken, prawns, tofu or edamame. Adjust the pan size to avoid overcrowding.

Gluten-free

Use certified gluten-free tamari instead of standard soy sauce. Check the labels of all packaged sauces and seasonings.

Extra heat

Add red pepper flakes, sliced fresh chilli or a small amount of chilli oil at the end. Add gradually. Heat intensity cannot be removed once incorporated.

No sesame

Omit the sesame oil and finish with a teaspoon of rice vinegar or a small amount of lime juice.

Storage

Cool leftovers promptly and place them in a sealed container. Refrigerate for up to 3 days. Reheat in a hot frying pan until steaming throughout.

The cauliflower may release additional moisture after refrigeration. Reheating uncovered in a pan is preferable to microwaving if a firmer texture is required. Do not repeatedly cool and reheat the dish.

Can frozen cauliflower rice be used?

Yes. Add it directly to the hot pan. Cook uncovered for 5 to 7 minutes, stirring regularly, until excess water has evaporated. Thawing first is not required.

Why is my cauliflower fried rice soggy?

The usual causes are excess moisture, a small pan, low heat or overcooking. Use a wide pan, cook uncovered and avoid adding liquid. If the cauliflower is very wet, cook it for an additional 1 to 2 minutes before seasoning.

Can I make this recipe without eggs?

Yes. Omit the eggs and add tofu, edamame or another prepared protein. The remaining method stays unchanged.

Can I prepare the cauliflower in advance?

Yes. Rice the cauliflower up to 2 days in advance and store it in a sealed container in the refrigerator. Pat it dry if condensation has formed.

Is cauliflower fried rice keto?

It is lower in carbohydrates than fried rice made with white rice, but the total carbohydrate level depends on the peas, carrots, sauce and serving size. For a stricter low-carbohydrate version, reduce the peas and carrots and use a suitable low-carbohydrate sauce.

What can I serve with cauliflower fried rice?

Can I use pre-cooked rice as well as cauliflower?
