- Toast the rice. Add the rinsed rice and stir for 1–2 minutes so that each grain is coated in the aromatic oil. This short step adds flavour and helps the grains stay separate.
- Add the liquid. Pour in the coconut milk and chicken stock. Add the lime zest and the remaining ½ teaspoon of salt. Stir once, scraping the bottom of the pan to release any browned bits.
- Return the chicken. Bring the liquid to a gentle simmer. Nestle the browned chicken thighs into the rice. Any juices collected on the plate should also be added to the pan.
- Cook covered. Reduce the heat to low. Cover the pan with a tight-fitting lid and cook for 18–22 minutes. Do not stir or repeatedly lift the lid during this stage. The rice should absorb the liquid and become tender.
- Check the chicken and rice. The chicken must reach an internal temperature of 74°C / 165°F at the thickest point. The rice should be tender with no excess liquid remaining. If the rice is still firm, add 2–3 tablespoons of hot stock or water, cover and cook for another 4–5 minutes.
- Rest the dish. Remove the pan from the heat and leave it covered for 10 minutes. This allows the remaining steam to finish the rice.
- Finish and serve. Drizzle over the lime juice. Taste and adjust the seasoning. Scatter over the spring onions and coriander. Serve with lime wedges and sliced chilli, if required.

Tips for reliable results
- Use a wide pan. A wide, heavy pan distributes the heat more evenly and gives the rice enough surface area to cook properly.
- Do not skip browning. The chicken develops more flavour when browned before the rice is added. The browned pieces left on the base of the pan also season the cooking liquid.
- Keep the lid closed. Steam is essential for cooking the rice. Lifting the lid too often allows heat and moisture to escape.
- Use full-fat coconut milk. Light coconut milk can be used, but the rice will have a thinner texture and less coconut flavour.
- Add lime juice at the end. Extended cooking can reduce the fresh character of lime juice. Zest can be added earlier, but juice is best added after resting.
- Check chicken temperature. Colour alone is not a sufficient safety test. Use an instant-read thermometer and check the thickest part of the chicken.
Variations
Add vegetables
Stir in 100g frozen peas during the final 5 minutes of cooking. Sliced peppers can be added with the onion, while baby spinach can be folded through after the rice has rested.
Use chicken breast
Boneless chicken breast can be substituted, but it is leaner and can become dry if overcooked. Cut large breasts into thick, even pieces and begin checking the temperature earlier.
Increase the heat
Add 1 finely sliced red chilli with the garlic and ginger, or replace the chilli flakes with 1 teaspoon of red curry paste. Check the salt if using curry paste, as some varieties contain added sodium.
Make it dairy-free

Use brown rice
Brown rice requires substantially more liquid and a longer cooking time. It is not a direct substitute in this method. Follow the cooking instructions on the rice packet and ensure the chicken remains covered while the rice cooks.

Can I use chicken breasts instead of thighs?
Yes. Use approximately 600g chicken breast, preferably cut into evenly sized portions. Brown it briefly, then check the internal temperature before the rice is fully finished. Remove the chicken temporarily if necessary and return it for the final few minutes.
Why is my coconut rice mushy?
Mushy rice usually results from excess liquid, insufficient rinsing or stirring during cooking. Rinse the rice thoroughly, measure the liquid accurately and leave the rice undisturbed while it cooks. Resting the covered dish also improves the texture.
Can I prepare this recipe ahead of time?
Yes. Cool the chicken and rice promptly, transfer it to a covered container and refrigerate for up to 3 days. Reheat until steaming hot throughout. Add a small splash of stock or water before reheating to loosen the rice.
