Ingredients
- 1½ pounds boneless, skinless chicken breasts or thighs
- 2 medium bell peppers, thinly sliced
- 1 large yellow onion, thinly sliced
- 2 medium tomatoes, diced
- 3 garlic cloves, finely minced
- 2 tablespoons fresh lime juice, divided
- 1 tablespoon olive oil
- 2 teaspoons chilli powder
- 1½ teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup chicken stock
- 8–12 small flour tortillas, for serving
Method
- Prepare the vegetables. Slice the peppers and onion into thin, even strips. Dice the tomatoes and mince the garlic.
- Make the seasoning. In a small bowl, combine the chilli powder, cumin, smoked paprika, oregano, salt and black pepper.
- Layer the slow cooker. Pour the chicken stock into the slow cooker. Add the sliced onion, peppers, tomatoes and garlic.
