Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • ¼ teaspoon red pepper flakes, optional
  • 2 cans cannellini beans, 15 ounces each, drained and rinsed
  • 6 cups low-sodium vegetable broth or chicken broth
  • 1 medium Yukon Gold potato, peeled and diced, optional
  • 5 packed cups chopped kale, tough stems removed
  • 1 tablespoon fresh lemon juice, plus more to taste
  • ¾ teaspoon kosher salt, plus more to taste
  • ½ teaspoon black pepper
  • Chopped parsley or grated Parmesan, optional, for serving

Method

  1. Prepare the vegetables. Dice the onion, carrots, celery, and potato if using. Remove the tough stems from the kale and chop the leaves into bite-sized pieces.
  2. Cook the aromatics. Heat the olive oil in a large Dutch oven or heavy soup pot over medium heat. Add the onion, carrots, celery, and a small pinch of salt. Cook for 6 to 8 minutes, stirring occasionally, until the vegetables begin to soften.
  3. Add the garlic and herbs. Stir in the garlic, rosemary, thyme, and red pepper flakes. Cook for 30 to 60 seconds, until fragrant. Do not allow the garlic to brown.
  4. Add the beans and broth. Add the drained beans, broth, and diced potato if using. Stir to combine. Increase the heat and bring the soup to a boil.
  5. Simmer. Reduce the heat to medium-low. Simmer uncovered for 12 to 15 minutes, or until the potato is tender and the broth has taken on the flavor of the vegetables and herbs.
  6. Thicken the soup. Use a potato masher or the back of a wooden spoon to mash some of the beans against the side of the pot. Leave the remaining beans whole. This creates a thicker broth while keeping the soup chunky.
  7. Add the kale. Stir in the chopped kale. Simmer for 5 to 8 minutes, until the kale is wilted and tender. Baby kale may require less cooking time.
  8. Finish and season. Remove the pot from the heat. Stir in the lemon juice, remaining salt, and black pepper. Taste and adjust the seasoning. Add more lemon juice if the soup tastes flat.
  9. Serve. Ladle the soup into bowls. Add chopped parsley, grated Parmesan, or a small drizzle of olive oil if desired. Serve immediately.
