  1. Rinse the quinoa. Place the quinoa in a fine-mesh sieve and rinse it under cold running water for approximately 30 seconds. Agitate the grains with your fingers while rinsing.

  2. Cook the quinoa. Transfer the rinsed quinoa to a medium saucepan. Add the water and a small pinch of salt. Bring to a boil over medium-high heat.

  3. Simmer. Reduce the heat to low, cover the saucepan and simmer for 12 to 15 minutes, or until the water has been absorbed and the quinoa is tender.

  4. Rest and fluff. Remove the saucepan from the heat and leave it covered for 5 minutes. Fluff the quinoa with a fork, then transfer it to a large mixing bowl.

  5. Prepare the vegetables. While the quinoa cooks, drain and rinse the chickpeas. Dice the cucumber and bell pepper, halve the tomatoes, chop the onion and parsley, and slice the olives.
