Ingredients

Oat base and crumble

  • 150 g rolled oats
  • 120 g oat flour
  • 75 g light brown sugar or coconut sugar

  • 2 tablespoons light brown sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornflour
  • 1 teaspoon vanilla extract

Method

  1. Prepare the tin. Preheat the oven to 180°C, or 160°C fan. Line a 20 cm square baking tin with baking parchment, leaving an overhang on two sides. The overhang will allow the cooled slab to be lifted out without disturbing the edges.

  2. Combine the dry ingredients. Add the rolled oats, oat flour, sugar, baking powder, salt, and lemon zest to a large bowl. Stir until evenly distributed.

  3. Add the fat. Pour in the melted coconut oil or add the melted vegan butter. Mix until the oats are coated and the mixture holds together when pressed. If it remains very dry, add the plant milk one tablespoon at a time. Do not make the mixture wet.

  4. Form the base. Set aside approximately one-third of the oat mixture for the topping. Tip the remaining mixture into the prepared tin. Press it firmly and evenly across the base. Compacting the mixture is necessary for clean slices.

  5. Part-bake. Bake the base for 12–15 minutes, until lightly golden at the edges and firm enough to support the filling.

  6. Prepare the raspberry layer. While the base is baking, place the raspberries, raspberry jam, sugar, lemon juice, cornflour, and vanilla in a bowl. Stir gently. Crush some of the raspberries with the back of a spoon, but leave a portion whole for texture.

  7. Add the filling. Remove the tin from the oven. Spread the raspberry mixture over the warm base, taking it close to the edges without pressing down.

  8. Add the crumble. Scatter the reserved oat mixture over the raspberry layer. Leave a few small areas of fruit visible. This allows steam to escape and provides a more even balance between fruit and topping.

  9. Bake again. Return the tin to the oven and bake for 25–28 minutes. The topping should be golden and the raspberry mixture should be visibly bubbling at the edges.

  10. Cool completely. Place the tin on a wire rack and leave to cool for at least one hour. For the cleanest slices, refrigerate the bars for 30–60 minutes after cooling.

  • Drain frozen raspberries. Excess water can make the filling loose. Thaw the berries in a sieve and discard the liquid before using.

  • Mixed berry bars: Replace up to half of the raspberries with blackberries or blueberries. Cut larger berries in half.
