Servings

Serves 2–3
Ingredients
- 1 block extra-firm tofu, approximately 400 g or 14 oz, drained
- 1 tablespoon neutral oil, such as avocado, rapeseed, or sunflower oil
- 1 tablespoon soy sauce or tamari
- 2 tablespoons cornstarch, also called cornflour
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- ¼ teaspoon black pepper
- 1 tablespoon sesame seeds, optional
- Sliced spring onions, optional, for serving
Method
- PREHEAT. Set the air fryer to 200°C or 400°F. Preheat for approximately 3 minutes if the appliance instructions recommend preheating.
- DRY. Drain the tofu. Wrap it in a clean kitchen towel or several layers of paper towel and press gently to remove surface moisture. For a firmer texture, place a plate or pan on top and press for 10–15 minutes. This additional time is optional and is not included in the 20-minute total.
- CUT. Cut the tofu into cubes approximately 2 cm or ¾ inch wide. Irregular hand-torn pieces can also be used. Their uneven edges provide additional surfaces for browning.
- SEASON. Place the tofu in a large bowl. Add the oil, soy sauce, garlic powder, smoked paprika, and black pepper. Toss carefully until the pieces are coated.
- COAT. Sprinkle the cornstarch over the tofu. Toss again until the coating is distributed evenly. Do not compress or vigorously stir the tofu, as this may break the pieces.
- ARRANGE. Place the tofu in the air-fryer basket in one layer. Leave space between the pieces. If the basket is crowded, cook in two batches.
- AIR FRY. Cook at 200°C or 400°F for 8 minutes. Shake the basket or turn the tofu pieces. Continue cooking for 5–7 minutes, until the edges are golden brown and the exterior is crisp.
- SERVE. Add sesame seeds and sliced spring onions, if required. Serve immediately with rice, noodles, vegetables, salad, or a dipping sauce.
Air Fryer Crispy Tofu (Vegan, 20 Minutes)

Crispy air fryer tofu is a vegan protein suitable for rice bowls, salads, noodles, wraps, and dipping sauces. The method uses extra-firm tofu, a small amount of oil, soy sauce, and cornstarch to produce a browned exterior without deep-frying.
The stated 20-minute time assumes the tofu is drained and thoroughly blotted. A full 10–15 minute pressing period can be added if the tofu contains substantial moisture.

Definition
tofu (noun) A food made from coagulated soybean milk and pressed into a solid block.
crispy (adjective) Having a firm, brittle exterior produced by sufficient heat and reduced surface moisture.
For this recipe, moisture control is the primary texture factor. Extra-firm tofu is preferable. Soft or silken tofu is not suitable because it will not retain its shape during mixing or air frying.

Use tamari if a gluten-free preparation is required. Check the product label because soy sauce and tofu brands may have different allergen declarations.

Tips
USE EXTRA-FIRM TOFU. Other varieties contain more water and are more likely to break apart. If only firm tofu is available, press it for longer before cutting.
DRY THE SURFACE. Cornstarch adheres more effectively when the tofu is not wet. Blot the block thoroughly after draining.
ADD CORNSTARCH LAST. Mixing the starch into the soy sauce before adding it to the tofu can produce a paste rather than a light, dry coating. Season first, then sprinkle in the cornstarch.
AVOID OVERCROWDING. Hot air must circulate around each piece. A full basket can create a softer exterior and uneven browning.
SHAKE ONCE. Turning the pieces halfway through cooking exposes additional surfaces to the circulating heat.
SERVE THE TOFU BEFORE SAUCING. Wet sauces soften the crust. For maximum crispness, serve sauce separately or add it immediately before eating.
CHECK EARLY. Air fryers vary in basket size, fan strength, and heat distribution. Begin checking at 12 minutes during the first preparation.
Variations
SESAME-GINGER. Add ½ teaspoon ground ginger to the seasoning. Serve with sesame seeds, spring onions, and a sauce made from soy sauce, rice vinegar, and grated ginger.
SPICY. Add ¼–½ teaspoon chilli flakes or cayenne pepper. Alternatively, serve the finished tofu with chilli oil or sriracha.
GLUTEN-FREE. Use tamari instead of standard soy sauce and verify that the cornstarch and tofu are labelled gluten-free if cross-contact is a concern.
OIL-FREE. Omit the oil. The tofu will still brown, but the exterior may be slightly less rich and crisp. Use a non-stick basket or suitable liner according to the air-fryer manufacturer’s instructions.
BARBECUE. Use garlic powder, smoked paprika, black pepper, and a small amount of barbecue sauce after cooking. Do not coat the tofu heavily with barbecue sauce before air frying, because the sugar may burn.
BUFFALO. Air fry the tofu without a wet sauce. Toss the cooked pieces with buffalo sauce just before serving and provide a plant-based dressing separately.

Storage
Transfer leftovers to a covered container and refrigerate within 2 hours. Use within 3–4 days. The tofu will soften during storage.
For reheating, return the tofu to an air fryer at 190°C or 375°F for 3–5 minutes. Check that it is hot throughout before serving. Microwaving is faster but will not restore the crisp exterior.
FAQ
Can tofu be air fried without pressing?
Yes. Drain and blot the tofu thoroughly, then cut and season it. The outside may be less crisp than tofu that has been pressed for 10–15 minutes. Pressing is recommended when the block feels particularly wet.
Why is my air fryer tofu not crispy?
The most common causes are excess moisture, too much sauce, an overcrowded basket, or insufficient cooking time. Use extra-firm tofu, dry it carefully, apply a thin cornstarch coating, and arrange the pieces in a single layer.
Can I use frozen tofu?
Yes. Frozen and thawed tofu has a more porous texture and can absorb seasoning effectively. Thaw it completely, then press out the additional liquid before cutting. The texture will be chewier than tofu made from a refrigerated block.
Is cornstarch necessary?
No, but it is the main ingredient responsible for the dry, crisp coating. Without cornstarch, the tofu can still brown, but the surface is generally less crunchy.
Can I make this recipe without oil?
Yes. Omit the oil and use a non-stick basket or approved liner. Oil-free tofu may require an additional 1–3 minutes of cooking, depending on the appliance.
What should I serve with crispy tofu?
Serve it with rice, noodles, quinoa, steamed vegetables, salad, or wraps. It can also be added to a stir-fry after the vegetables and sauce have been cooked. Add the tofu at the end to limit softening.
Is this recipe vegan?
Yes. The ingredients listed are plant-based. Use a vegan-certified soy sauce or tamari if certification is required for dietary or allergen-control purposes.
