Method

  1. Prepare the chicken. Remove excess fat from the chicken thighs and cut them into evenly sized pieces. Uneven pieces may cook at different rates.
  2. Add the base ingredients. Place the onion, garlic and ginger in the slow cooker. Add the curry powder, cumin, paprika, salt and black pepper.
  3. Add the chicken and vegetables. Add the chicken, carrots, bell pepper and potatoes, if using. Stir briefly to distribute the spices. A full sautéing stage is not required.

  7. Adjust the consistency, if required. If the curry is thinner than required, mix the cornflour with cold water until smooth. Stir the mixture into the curry during the final 20–30 minutes of cooking. Alternatively, transfer the sauce to a saucepan and reduce it over medium heat.
  8. Check the seasoning. Taste the sauce only after the chicken has cooked. Add additional salt, curry powder or chilli according to the required heat level.

Use fully thawed chicken. Do not place frozen chicken directly into the slow cooker for this recipe, as it may remain at an unsafe temperature for too long before cooking through.

The chicken must reach 74°C / 165°F in the thickest piece. The thermometer should be inserted into the centre of the meat and should not touch the slow cooker or a bone.

Refrigerate leftovers within two hours of cooking. If the surrounding temperature is above 32°C / 90°F, refrigerate them within one hour. The USDA leftovers guidance provides the same time limit for perishable cooked food.

Divide leftovers into shallow containers to promote faster cooling. Store in the refrigerator and reheat until steaming hot throughout. For best quality, use refrigerated leftovers within three to four days.

Tips

  • Use chicken thighs. Thigh meat generally remains more moist than chicken breast during extended cooking.
  • Cut evenly. Pieces of similar size are more likely to finish at the same time.
  • Do not add excess stock. The chicken, tomatoes and coconut milk all contribute liquid. Adding too much stock can produce a thin sauce.
  • Keep the lid closed. Each lid opening releases heat and moisture.
  • Add delicate ingredients later. Fresh spinach, peas and chopped herbs can be added during the final 10–15 minutes.
  • Control the heat. Medium curry powder produces a moderate result. Add chilli powder, fresh chilli or cayenne only after assessing the curry near the end.

Variations

Vegetable

Replace some of the chicken with cauliflower florets, extra carrots, sweet potato or chickpeas. Add quick-cooking vegetables during the final hour where possible to prevent excessive softening.

Tomato

Increase the passata to 600 ml and reduce the coconut milk to 300 ml. This produces a more tomato-led sauce with a lighter coconut flavour.

Creamy

Use 400 ml coconut milk and add 2 tablespoons of plain yoghurt after cooking. Do not boil the yoghurt, as high heat may cause it to split. Stir it through immediately before serving.

Spicy

Add one finely chopped red chilli with the onion, or use ½ teaspoon of cayenne pepper with the dry spices. Heat levels vary by curry powder, chilli and personal tolerance. Add gradually.

Dairy-free and gluten-free

The base recipe is dairy-free. Check the labels on curry powder, chicken stock and any prepared passata if strict gluten avoidance is required.

Chicken breast

Chicken breast may be used, but it is less tolerant of extended cooking. Cut it into larger pieces and begin checking the internal temperature toward the earlier end of the cooking range.

Can I put raw chicken directly into the slow cooker?

Yes. Raw, fully thawed chicken can be added directly with the other ingredients. It must reach 74°C / 165°F in the thickest part before serving.

Can I use chicken breast instead of thighs?

Yes, but chicken breast can become dry if overcooked. Use similarly sized pieces and check the temperature before the maximum cooking time.

Can I make this curry without coconut milk?
