METHOD

  1. Rinse the rice. Place the uncooked wild rice in a fine-mesh sieve and rinse under cold water. Drain thoroughly. Use plain wild rice or an unseasoned wild rice blend. Do not use a boxed rice mix containing a separate seasoning packet.

  2. Prepare the vegetables. Dice the onion, carrots and celery into small, evenly sized pieces. Mince the garlic. Uniform pieces support consistent cooking during the extended slow-cooker process.

  3. Load the slow cooker. Add the chicken breasts, rinsed wild rice, chicken broth, onion, carrots, celery, garlic, rosemary, thyme, sage, bay leaves, salt and black pepper to a 6-quart slow cooker.

  4. Combine the ingredients. Stir carefully to distribute the rice and seasonings through the broth. Ensure the chicken is covered or substantially surrounded by liquid.

  5. Cook on LOW. Cover and cook for 6–8 hours, or until the chicken reaches an internal temperature of 165°F (74°C), the rice is tender and the vegetables are soft.

  6. Alternative HIGH setting. Cook for 3–4 hours on HIGH. Cooking time varies according to the slow cooker model, the size of the chicken breasts and the type of wild rice used.

  7. Remove the chicken. Transfer the cooked chicken to a clean plate or shallow bowl. Remove and discard the bay leaves.

  8. Shred the chicken. Use two forks to shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker.

  9. Add the dairy. Pour in the half-and-half and stir. Set the slow cooker to LOW or KEEP WARM. Heat for 10–20 minutes, until the soup is hot and creamy. Do not allow the soup to boil after adding the dairy.

  10. Adjust the consistency. If the soup is thicker than required, add additional warm chicken broth. If it is thinner than required, leave the lid ajar for several minutes while the soup remains on LOW. The rice will continue to absorb liquid as the soup stands.

TIPS

Add the dairy at the end

Milk and cream can separate or curdle during prolonged high heat. Adding the half-and-half during the final 10–20 minutes reduces this risk and preserves a smoother texture.

Use the correct rice

Plain uncooked wild rice is appropriate for this method. Wild rice blends may require different cooking times. Parboiled rice, instant rice and boxed seasoned rice mixes are not interchangeable with uncooked wild rice.

Monitor the liquid

VARIATIONS

Dairy-free

Replace the half-and-half with 2 cups of an unsweetened, full-fat non-dairy creamer. Full-fat coconut milk can also be used, although it will introduce a mild coconut flavour. Add the substitute at the end of cooking.

Mushroom

Add 8 ounces of sliced mushrooms with the other vegetables. Cremini, white button or oyster mushrooms are suitable. Mushrooms will soften during the slow-cooker process.

Vegetable-forward

Reduce the chicken to 1 pound and add extra carrots, celery or mushrooms. This produces a higher proportion of vegetables without changing the cooking method.

Chicken thighs
