Ingredients
- 1 large flour tortilla
- 2 large eggs
- 1½ cups packed fresh spinach, washed and dried
- ¼ cup crumbled feta cheese
- ½–¾ cup shredded mozzarella cheese

Method
- Prepare the filling. Crack the eggs into a small bowl and beat lightly. Set aside. If the spinach leaves are large, roughly tear them.
- Wilt the spinach. Heat the olive oil in a non-stick frying pan over medium heat. Add the spinach, garlic powder and onion powder. Cook for about 1 minute, stirring, until the spinach begins to wilt.
- Cook the eggs. Pour the beaten eggs into the pan. Stir gently with a spatula, combining the eggs with the spinach. Cook for 1–2 minutes, until the eggs are fully set. Season with a small amount of salt and black pepper.
- Add the feta. Stir the crumbled feta through the cooked egg and spinach mixture. Transfer the filling to a plate and wipe out the pan if necessary.
- Start the quesadilla. Reduce the heat to medium-low and place the tortilla in the pan. Sprinkle half of the mozzarella over one half of the tortilla.
- Add the filling. Spoon the spinach, egg and feta mixture over the mozzarella. Keep the filling in an even layer and leave a narrow border around the edge.
- Fold and cook. Sprinkle the remaining mozzarella over the filling. Fold the empty half of the tortilla over the filling to create a half-moon shape. Cook for approximately 90 seconds, or until the underside is lightly golden and the cheese has started to melt.
- Turn the quesadilla. Carefully flip the quesadilla using a wide spatula. Cook for another 90 seconds, until the second side is crisp and the cheese is fully melted.
- Rest and serve. Transfer to a board and leave for 1 minute. Cut into two or three wedges and serve warm.
