Method

  1. Heat the oven. Preheat the oven to 220°C, or 200°C fan. Line a large baking tray with baking paper if required.
  2. Prepare the quinoa. Place the rinsed quinoa and water or vegetable stock in a saucepan. Bring to the boil, then reduce the heat. Cover and simmer for 15 minutes, or until the liquid has been absorbed. Remove from the heat and leave covered for 5 minutes. Fluff with a fork.
  3. Prepare the vegetables and chickpeas. Pat the chickpeas dry with kitchen paper. Add the chickpeas, carrots, broccoli and red onion to the baking tray. Add the olive oil, smoked paprika, cumin, garlic granules, salt and pepper. Toss until evenly coated.
  4. Roast. Spread the ingredients into one layer. Roast for 25–30 minutes, turning the vegetables once halfway through cooking. The chickpeas should be lightly browned and the vegetables should be tender.
  5. Make the dressing. Add the tahini, lemon juice, garlic, maple syrup, salt and pepper to a small bowl. Whisk until combined. Add the water one tablespoon at a time until the dressing is smooth and pourable. Tahini may thicken when lemon juice is added; continue whisking while adding the water.
  6. Prepare the fresh ingredients. Shred the kale and slice the cucumber. Massage the kale with clean hands for 30–60 seconds if a softer texture is preferred. Keep the avocado separate until serving.
