METHOD

  1. Prepare the marinade. In a small bowl, combine the olive oil, lemon juice, garlic, smoked paprika, oregano, salt and black pepper.

  2. Marinate the chicken. Pat the chicken breasts dry. Place them in a shallow container and coat with the marinade. Cover and refrigerate for at least 30 minutes. The chicken may be marinated for several hours if required. Do not marinate chicken at room temperature.

  3. Cook the rice. Prepare the brown rice according to the packet instructions. Once cooked, leave it covered for five minutes, then fluff with a fork. Set aside while the chicken and vegetables are prepared.

  4. Prepare the vegetables. Place the sliced peppers, courgettes, red onion and broccoli in a large bowl. Add the olive oil, smoked paprika, salt and black pepper. Toss until evenly coated.

VARIATIONS

Mediterranean bowl

Replace the paprika with dried Italian herbs. Add cucumber, olives and a tablespoon of crumbled feta to each serving. Use a lemon and yoghurt dressing stored separately.

Higher-protein bowl

Add chickpeas or white beans to the rice and vegetable mixture. Alternatively, increase the cooked chicken portion. The additional ingredients will change the nutritional values.

Lower-carbohydrate bowl
