Potato topping
- 1.2 kg potatoes, peeled and cut into even chunks
- 3 tablespoons vegan butter or olive oil
- ½ cup unsweetened plant milk, warmed

Method
Cook the lentils. Place the rinsed lentils and vegetable stock in a saucepan. Bring to a boil, then reduce the heat and simmer for 25–35 minutes, or until the lentils are tender. Drain any excess liquid. Do not overcook them to the point of becoming a purée.
Boil the potatoes. Place the potato chunks in a large saucepan and cover with cold water. Add a generous pinch of salt. Bring to a boil and cook for 15–20 minutes, or until a knife passes through the centre without resistance.
Prepare the vegetables. While the lentils and potatoes cook, heat the olive oil in a large frying pan or Dutch oven over medium heat. Add the onion, carrots, celery and mushrooms. Cook for 8–10 minutes, stirring periodically, until the vegetables soften and begin to brown.
Add the flavour base. Stir in the garlic, tomato purée, thyme, rosemary, smoked paprika, salt and black pepper. Cook for 1 minute. Add the red wine, if using, and simmer for 3–5 minutes until reduced. If not using wine, add a small splash of vegetable stock.
Combine the filling. Add the cooked lentils, soy sauce or tamari and frozen peas to the vegetable mixture. Simmer uncovered for 8–10 minutes. The filling should be thick and moist, not watery. If it is loose, continue simmering. If it is dry, add vegetable stock one tablespoon at a time.
Mash the potatoes. Drain the potatoes thoroughly and return them to the warm saucepan. Add the vegan butter or olive oil, warmed plant milk, salt and black pepper. Mash until smooth. The mash must be firm enough to spread without sinking into the filling.
Assemble the pie. Heat the oven to 200°C fan / 220°C conventional / 425°F. Transfer the lentil mixture to a 23 x 33 cm baking dish. Spread the mashed potatoes evenly over the top. Use a fork to create ridges across the surface. These ridges will brown during baking.

Bake. Place the dish on a baking tray to contain any bubbling filling. Bake for 20–25 minutes, or until the edges are bubbling and the potato topping is lightly browned. For a darker top, place the dish under the grill for 2–3 minutes. Monitor continuously.
Rest and serve. Remove the dish from the oven and leave it to stand for 5–10 minutes. This allows the filling to thicken slightly and reduces the risk of scalding when served.

- Use the correct lentils. Brown or green lentils retain their shape and provide a substantial filling. Red lentils cook more quickly and become softer, which can produce a less defined texture.
